| Ingredients: 1 Cup All Purpose Flour 1 Tablespoon Baking Powder 1 Teaspoon Salt 2 Tablespoons White Sugar 1 Cup Yellow or White Cornmeal 2 Eggs, beaten 1 cup Milk ¼ Cup Vegetable Oil or Melted Shortening Directions: Preheat oven to 400° In a large bowl combine flour, baking powder, salt, sugar and cornmeal. Make a well in the middle of the dry ingredients then add the milk and eggs. Stir just until dry ingredients are moistened. Add the oil and mix. Divide equally into a greased or paper lined muffin pan. This can also be made into a loaf or baked in a corn bread skillet. Make sure to grease whatever pan you use. Bake for 20-25 minutes, until tops are lightly browned. Servings: 6 Recipe Difficulty: Normal Preparation Time:15 Minutes Cooking Time: 20-25 Minutes Country: USA |
