bananabreadIngredients:

2/3 Cup Shortening
1 Cup White Sugar
4 Eggs
3 ½ Cups All Purpose Flour
2 Teaspoons Baking Powder
1 Teaspoon Baking Soda
1 Teaspoon Salt (I use a scant teaspoon for a healthier bread)
2 Cups Ripe Bananas, Mashed
1 Cup Chopped Walnuts or Pecans

Directions:

Preheat oven to 350°

Cream shortening and sugar then add eggs and beat well. Add baking powder, baking soda and salt and mix until blended. Alternate flour and mashed bananas and mix until well blended after each addition. Stir in nuts.

Pour into 2 well-greased 9” x 5” x 3” load pans. Bake for 45 to 50 minutes or until done. Remove from pan and cool completely. Store tightly wrapped.

Notes:


The banana bread in the picture displays the results of a mother daughter baking time. Walnuts for the mother and chocolate chips for the daughter. : )
