Ingredients: 1 Cup Pecan’s or Raw Peanuts 1 Cup White Sugar ½ Cup White Corn Syrup 1/8 Teaspoon Salt (Only if using peanuts) 1 Tablespoon Butter or Margarine 1 Teaspoon Baking Soda 1 Teaspoon Vanilla Directions: Grease the bottom of a cookie sheet with butter or margarine We use a large 6 cup glass measuring cup, with a handle, to cook the brittle in. Add nuts, sugar, corn syrup and salt, to large measuring cup and stir. Cook 4 minutes on high then stir and cook an additional 1½ minutes on high. Add butter, stir and cook 1 minute 40 seconds on high Add baking soda and vanilla. Stir, very quickly, until foaming. Pour onto a buttered cookie sheet Cool completely, crack and store in an airtight container. Notes: All microwaves cook at different rates so you may need to experiment with the times, for your microwave, to reach the hard crack stage for pecan brittle.
