Ingredients:

1Quart Fresh Blueberries (Fresh fruit such as blackberries, raspberries and marion berries work well)
½ Cup Cold Water
2 Tablespoons Cornstarch
½ Cup White Sugar
Dash of Salt
½ Teaspoon Lemon Juice

Directions:

Wash fresh berries or use frozen berries. In a small bowl combine the cold water and cornstarch. Place berries in a medium size pot. Add the water/cornstarch mixture, sugar and salt, stirring constantly over a low heat until thickened. Stir in the lemon juice and remove from heat. Cool and serve over cheesecake, yellow or white cake or ice cream.

Ingredients

30 oz. can fruit cocktail, drained
11 oz. can mandarin oranges, drained
20 oz. can pineapple chunks, do not drain
10 oz. jar of maraschino cherries, drained
2 firm bananas, slice into disks
1 large or 5.1 oz. box of instant vanilla pudding
    Directions
    Combine all fruit in a large mixing bowl. Add instant pudding mix. Stir until pudding mix is blended with the pineapple juice. Chill for at least 30 minutes or overnight. Stir before serving.

    Variations
    This recipe can be made with any combination of fruit that you desire. Feel free to add and experiment such as adding/substituting marshmallows, nuts, apples, blueberries, etc. Also, feel free to try different flavors of instant pudding mix such as lemon or banana.

    To make this a sugar free treat, get fruit canned in juice and try the sugar free instant pudding. This dessert comes out wonderful either way.

    Ingredients

    Large Whole Apples or Pears (If using pears, peel first)

    For each piece of fruit:
    2 Tablespoons Brown Sugar
    1/8 Teaspoon Cinnamon
    1 Teaspoon Butter or Margarine
    2 Tablespoons Water

    Directions:


    Core the apples or pears. With a fork pierce the skin of the apple several times so they won't burst during cooking. Stand the apples upright in a covered microwavable dish. Fill each core with brown sugar, cinnamon and butter or margarine. Pour the total amount of water around the fruit. Cover and microwave on High according to the following times. Serve warm with vanilla ice cream or whipped topping.

    1 apple 2-4 minutes
    2 apples 4-5 1/2 minutes
    3 - 4 apples 6-8 minutes

    Notes:

    All microwaves cook differently. Test apples with a fork. They are done when the fruit is soft.
