Ingredients: 1-8oz. Pkg. (9-10 Noodles) Lasagna Noodles 1–26 oz. Jar of Pasta Sauce (I like the Classico brand, especially Tomato & Basil) 1 lb. Ground Beef 1/2 Onion, chopped 2 Cups Cottage Cheese 1 Egg 1 Tablespoon Dried Parsley ½ Teaspoon Salt 1 lb. Mozzarella Directions: Preheat oven to 375° Cook lasagna noodles according to the package. When the noodles are cooked, lay them out on a sheet of aluminum foil. The noodles will remain warm without over-cooking and will release easily from the foil when needed. While the noodles are cooking brown the hamburger and chopped onion. Spread ½ cup of the pasta sauce in the bottom of a 13”x 9” pan. Note this lasagna can be cooked in the microwave also, so choose a glass or metal pan depending on your cooking method. Mix remaining pasta sauce with the browned hamburger. In a small bowl mix the cottage cheese, egg, parsley and salt. Place 3 noodles on the bottom of the pan. Layer half of the cottage cheese mixture, then half of the mozzarella cheese and last add a layer of the meat/sauce mixture. Repeat layers ending with a layer of mozzarella. Bake in a 375° oven, for 30 minutes or Microwave on High for 20 – 26 minutes. Let stand for 10 minutes before serving.
