Ingredients:pizza
Crust 1 Pkg. of Dry Yeast or 2 1/2 Teaspoons (Bulk Yeast)
3 1/2 Cups White Flour (Bread Flour is also great)
1/2 Teaspoon of Iodized Salt (I leave this a little scant)
1 Tablespoon of Olive Oil
1 Cup Warm Water (105 - 115 degrees)

Yields 1 large crust Pizza Ingredient suggestions

½ lb. hot pork sausage
4 oz. pepperoni
1 small can of mushrooms
1 lb. Mozzarella cheese
A light sprinkling of Asiago cheese on top of mozzarella
Green Peppers
Onions
Green Chilies or Jalapenos
Black Olives, sliced

Directions:
Warm the mixing bowl in the oven. Bowl should be warm not hot. Add the yeast and half of the warm water to the warm bowl. Let this stand, 1 minute, so the yeast dissolves. Add the flour, salt and olive oil and mix with heavy-duty electric mixer. While mixing slowly add water until dough forms a ball. Once the dough is combined mix for 4 minutes to knead the dough.

The dough should have a satin appearance when finished kneading.
During the kneading if the dough is too sticky add a tablespoon of
flour or if it is too dry and stiff add a little warm water until you
achieve the desired consistency. Dough should be soft but not sticky.

Cover and let dough rise for 1 hour in a warm, draft free place. (If you are in a hurry, let the dough rise for 10 minutes and then proceed with directions) Preheat oven to 430 degrees.

Punch the dough to deflate, let rest a few minutes then knead dough with hands for a minute. Next, form into crust on a greased pizza pan. Spread prepared pizza sauce on crust. Add ingredients and sprinkle oregano and any other desired herbs. Baste crust edge with olive oil. Bake for 24 minutes.

Notes:
This crust may also be made with an electric breadmaker. Put ingredients in order in the breadmaker pan. Check your breadmaker's manual for the right cycle on the breadmaker.

" What I love about cooking is that after a hard day, there is something comforting about the fact that if you melt butter and add flour and then hot stock, it will get thick! It's a sure thing! It's a sure thing in a world where nothing is sure; it has a mathematical certainty in a world where those of us who long for some kind of certainty are forced to settle for crossword puzzles. "
